Nisua

1 T. dry yeast
1/4 c. warm water
1 c. milk (make from nonfat dry milk and warm water)
1/2 c. margarine (melted)
3 eggs
3/4 c. sugar
1 tsp. salt
1/4 tsp. ground cardamom
7 c. flour

2 T. strong coffee
3 T. granulated sugar (divided)

Dissolve yeast in warm water. Add milk and margarine, eggs, 3/4 c. sugar, salt, cardamom and 3 c. of flour until smooth. Continue to add flour, stirring, until dough pulls away from sides of bowl. Turn out on a floured surface to knead. Knead till dough is smooth and elastic (dough is softer than standard bread dough.) Grease top of dough, cover and let rise until double in volume (about 1 1/2 hours.). Preheat oven to 325 degrees. Divide dough in half. Divide each half into 4 equal pieces and divide one of those pieces in thirds. Roll each of six pieces into a 12" rope. Braid three "fat"pieces together and secure the ends. Braid three "skinny" pieces together and place on top of the "fat" braid. Pinch ends of both braids together and tuck ends under. Place on a greased baking sheet. Repeat with other half of dough. Grease tops of each loaf, cover, and let rise until double in volume. Bake for 40 minutes, until top is golden brown. Remove from baking sheet and cool on rack. While warm, brush with 2T. sugar dissolved in 2 T. coffee. Sprinkle another T. of sugar over the loaves.
